FAQ
What restaurant owners usually ask
Short, practical answers from day-to-day work inside restaurants, cafés and hotels.
What does a restaurant consultant do?
A restaurant consultant helps a restaurant, café or hotel run in a more organised and more profitable way. At AR Akron Services this means: kitchen and floor organisation, menu design and costing, staff training, cash and expense control, stock and supplier management, and opening or re-opening venues. The work always starts with a site visit at your venue.
How much does a restaurant consultant cost?
It depends on the size of the venue and what you need: a specific task, such as menu costing or a staff seminar, costs less than a full reorganisation or the opening of a new venue. After the site visit we give you a written plan with priorities, cost and the expected result, so you can decide before anything starts.
How do you calculate the cost of a dish?
Each dish gets a recipe with exact quantities per portion. Every ingredient is costed at its current purchase price, allowing for yield loss (trimming, cooking). The total is the food cost of the portion. Comparing it with the selling price excluding VAT gives you the cost percentage and the margin of each dish. Dishes with a low margin are either repriced or get a new recipe or portion size.
What do you need to open a new restaurant?
The main steps are: a business plan and feasibility check, choosing the premises, licences together with an engineer and an accountant, renovation and equipment, a costed menu, choosing suppliers, staffing and training, and a soft opening before the official launch. We plan and supervise the whole preparation so the venue opens organised from day one.
How can a restaurant reduce food waste?
Waste comes down with fixed portions per recipe, the right stock rotation (first in, first out), ordering based on real sales, and recording everything that is thrown away. Recording quickly shows which dishes, shifts or suppliers cause the biggest losses.
Do you train staff on site?
Yes. We train waiters, hosts, cashiers and maîtres d'hôtel inside your own venue, on your own procedures. Training follows a certified adult-training methodology (University of Athens) and covers service, upselling, guest reception and bookings, cash desk procedures and onboarding new staff.
Do you work with hotels and tourism businesses?
Yes. Besides restaurants, tavernas, cafés and bars, we work with hotels and tourism businesses, both on food and beverage operations and on staff training. We work in Greek or English.
Which areas do you cover?
We are based in Attica and most of our work is in Athens. We have experience from venues in more than 15 cities and regions of Greece, from Athens to Veria and Alexandroupoli. For a project outside Attica, get in touch.
Which digital tools do you recommend for restaurants?
We build our own apps for the industry: TableReserve for online table reservations and GoFinanceOS for financial management (revenue, expenses, suppliers, payroll), which also works offline with a one-time license. Through akronwebuilder.gr we also build restaurant websites.
